[273-55] Prepare the Spring Onion Pancake!簡單自製蔥油餅!

We want to prepare Taiwanese food for the Wednesday night. Although I want to prepare my favorite food, Oyster omelet, Venus don't like it very much. She want to eat spring onion pancake and Pearl(made by tapioca) milk tea. We bought 2 Kg flour and Tapioca ball, then start to make it. It's my first time to combine the water and flour to make a pancake. During the process, I, as a massager, it's a very easy to make it become dough, because it's just like to do a massage.

It's cool, and I love the feeling. Then we just follow the recipe from the Youtube and some blogs. I have made it for 4 hours, but I won't feel tired. Venus and I think flour is a really interesting stuff, and we can made lots of different food from it. I made my first spring onion pancake, although it's not very good, it's a really good experience. And I will ask some masters how to make it more delicious. Hope I can do it next time.




Some tips for making Spring onion pancake. 
3 cups of all purpose flour
1 warm water
salt, oil, black pepper, sugar.

Put 3 cups of all purpose flour into a bowl. Then put the warm water slowly and separate it 5 times(Don't put all the water at the same time). Then use hand or chopstick to make it become a dough(about 3 to 5 minutes). What's a good dough? When the dough can take away from the bowl easily, that'll be OK. Then knead it about 5 minutes to make the dough balance the water in it. 

簡單的蔥油餅製作方法
準備三杯的中筋麵粉
一杯溫水(大約使用40~50℃的水,避免用熱水,加熱水麵團瞬間變熟,就很難做成麵團)
一些鹽、沙拉油、黑胡椒、糖。

將三杯的中筋麵粉放入碗中,再將溫水慢慢的加入麵粉中,大約分五次加入(不要一次就把水全加進去了),之後可以用手或是筷子將麵粉和水均勻混和成生麵團(大約3-5分鐘,第一次做的時候不知道手感,會做的更久一些),只要生麵團可以輕鬆的從碗中拿起來,就可以將生麵團放在桌上去揉它,讓水分可以更平均在整個生麵團上。



Put some oil to the bowl and put the dough to the bowl and cover it(Prevent dough lose the water). Resting about 30 minutes. It will be more moist and elastic. Then Cut it into 6 parts and make every parts become a cube(It'll be easy to flat later)


放一些油在碗中(避免黏碗),將生麵團放置碗中並找東西蓋起來(避免失去水分變硬),等大約三十分鐘(這段過程叫做醒麵,讓麵團發酵),生麵團會變的更濕潤更有彈性,再將生麵團分成六等分,並將每一等分的麵團變成正方體(等等在桿麵的時候會比較方便)。

Flat it and put some oil on the first layer(make it more crisp), and the black pepper, slat, sugar and Spring onion. Roll it tightly. If you want to eat more layer feeling, you can use a knife and cut it then rotate it become a snake.  Then Flat it the last time. Fry it, and the spring onion pancake is finished.  


將麵團桿平,放一層油在上面(放油可以讓麵食製品變的更香更酥,如果有豬油會更好),之後灑黑胡椒、鹽、糖(不擅長煮東西的我,總覺得糖是讓東西變好吃的小秘訣),最後灑上蔥,再把它捲起來,如果想要吃更多層次的感覺,可以捲起來之後,在中間畫一刀,再開始轉麵團(像在扭衣服一樣,但是不要太用力),轉完後再像蛇一樣的捲起來,再桿最後一次,就可以拿去煎了,好吃的蔥油餅就完成了。
